A delicious vegan option for topping a Tostada.

DIRECTIONS:
- Remove the tofu from the container, drain the liquid, wrap in kitchen paper and leave with a weight on top for about 15 minutes. Cut and crumble pressing with a fork
- Heat the olive oil in a good frying pan. Add inion, pepper and celery. Season with salt and pepper and sauté for about 4 minutes over low heat. Add the tofu and stir well. Add garlic, cumin and chipotles. Incorporate wine and stir well.
- Cook everything for a couple of minutes, add the salsa and let it come to a boil. Lower heat and let simmer for 12-15 minutes. Check consistency as it should not be too runny or too thick either.
- Place all ingredients and toppings on the table and let each of your guests have fun by preparing their own tostada.
Start with the tofu as bottom layer, then the avo and top with the fresh chopped coriander.
