Pork Tenderloin Fajitas

Ingredients:

  • 1.5 kgs pork tenderloin cut in thin stripes
  • Taco Seasoning +
  • 3 TBS lime juice
  • 1 medium onion, sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 yellow pepper, sliced
  • 4 TBS cooking oil
  • 12 Wheat Tortilla (15cm) +

An easy and quick weeknight meal dinner or good enough for a special meal.

This healthy pork fajitas are bursting with flavour and are quick and easy to do on a grill or stove top.

Let each one of your guests build their own fajita.

DIRECTIONS:

  1. Season the meat with the Taco Seasoning Mix.
  2. In a wok or large pan, sauté veggies with half the oil. Set aside.
  3. In the same pan, heat the rest of the oil, fry the meat until cooked and then reincorporate  the vegetables.
  4. Check seasoning.
  5. Heat the tortillas in a clean, hot pan or microwave using a Tortilla Warmer.
  6. Serve with guacamole and a salsa of your choice and let each guest make their own taco.
