Corn Fritters

Ingredients:

  • 1/2 Cup Masa Harina +
  • 1 Cup corn kernels
  • 1 tsp baking powder
  • 2 TBS all purpose flour (or any other gluten free)
  • 1/2 tsp salt
  • 2 Eggs, separated
  • Oil for frying
  • Agave Syrup +
  • Salsa of your choice +

These golden, crispy bites are made with fresh corn kernels folded in a Masa Harina fluffy batter, then fried to perfection.

Whether you prefer them sweet or savoury, corn fritters are a hit on any table.

DIRECTIONS:

  1. In a blender, add the corn kernels and blend quickly.
  2. Add the rest of the ingredients, except the egg whites and blend until the batter is smooth.
  3. In a separate bowl, whisk the egg whites until form peaks; then add the batter folding it in with a spatula.
  4. Heat the oil in a deep skillet. Once hot add spoonfuls of the batter and fry until golden brown.
  5. Place fritters on a paper towel to drain.
  6. Drizzle with agave syrup or a salsa of your choice.
